My Grandmothers Beets
When I was a kid this was my favorite summer dish. I would patiently kneel on the kitchen stool next to the counter watching my Grandma Mary Jane make these beets. When my mother would make them I I would insist they were not as good as Grandma Mary Jane's.
In my Grandmothers words. For my red beets. I wash them thoroughly and cut the stems about an inch long so that they don't bleed to death when you cook them. I cook them off until they are tender. I peel them and slice them thin. I put them in a pot and add a couple of spoons of butter, about a tablespoon of sugar and some grated onions and toss them do not stir that's what your mother does wrong. Let them heat through until the butter is melted and the sugar is dissolved. That's not difficult at all.
