Green Beans

Blistered Green Beans with Orange  Vinaigrette

  • 1 Pound of Trimmed Green Beans
  • 2 TBS Olive Oil
  • Salt and Pepper to Taste
  • 1 Large Navel Orange
  • 1/4 tsp Salt
  • 1 TBS White Wine Vinegar
  • 2 TBS Extra Virgin Olive Oil
  • Fresh Ground Pepper to Taste

Heat olive oil in a large skillet over medium high heat till it just starts to smoke, add the green beans working in batches if needed, don't crowd the skillet.  Sprinkle the green beans with salt and pepper.  Cook until the green beans are about half way blistered, about 8 minutes, only stir every two minutes (this will help the green beans blister).  Meanwhile zest the orange into a small bowl.  Segment the orange and set the segments aside to garnish the green beans before serving.  Squeeze the remain juice into the bowl with the zest add the extra virgin olive oil, white wine vinegar and salt.  Whisk until thoroughly combined.  When the green beans are finished cooking toss with vinaigrette, season with additional salt and pepper if needed and top with the segmented orange.
