Tomato Recipes 

Bruschetta Pasta

  • 4 oz Pasta ( We use Basil Reginetti from Sfoglini)
  • 2 Boneless Skinless Chicken Breasts, Cut into 1" Pieces
  • 1 TBS Olive Oil
  • 1 TBS Butter
  • McCormick Gourmet Sweet Basil & Oregano Bruschetta Chicken Seasoning 
  • 3 Heirloom Tomatoes, Diced
  • 1 Small Bunch of Swiss Chard (Spinach or Arugula can be Substituted)
  • Fresh Grated Parmesan

Prepare pasta according to package directions.  Heat oil and butter in a medium sized skillet.  Season chicken with bruschetta chicken seasoning and add to the skillet.  Saute chicken until its done and remove from pan.  Season tomatoes with the bruschetta chicken seasoning and add to the skillet.  Add the Swiss chard to the skillet and cook until the chard is wilted. Add the pasta and chicken to the skillet and cook for another minute or two.  Garnish with Parmesan.
